I use this as a base recipe for various wheat ales that I brew with fruit. If you notice that I did a 1/2 boil is because I was brewing 30 gallons and only had 15 gallon kettle. After primary fermentation, I split each into 10 gallon batches, then add different fruit to each batch. (blueberry, strawberry, and a mix of pineapple/bananas/blueberry/blackberries/raspberries) Figure 10 pounds of fruit per 10 gallon batch.
I purposely made this recipe not very complex, nor is it a "traditional" wheat ale. I used a 25kg Jerry can of Muntons Plain Light LME. and 12 pounds of Munton's Light Wheat DME. Yeast was Yyeast Americn Wheat (not sure of the actual product number, sorry! I"ll try to update when I look at my notes)
Flavor was slightly spicy with VERY little clove accent.
The Blueberry was fantastic, it tasted like, blueberries. Color...BLUE! Pretty Cool! This is a keeper! While not a light beer, it's very refreshing.
The Strawberry was extremely popular! It hit its flavor peak at about 5-6 months (thats when I ran out). I'd guess it was pretty drinkable in 4 weeks in the bottle, but just got better and better with age. Will DEFINITELY brew this again.
The Mixed Fruit: Surprisiingly there was more than 10 pounds of fruit in this batch, but the flavor was LIGHT! Almost no flavor of the bananas, a little color from the berries, and surprisingly not much flavor from the Pineapples. Just a hint of pineapple flavor, but almost undetectable. Honestly this batch wasn't very fruity, but it still was a good beer.
This recipe is NOT in the Wheat profile.
Try using any fruit, but in this recipe I'll be using strawberry as an example.

Special Instructions
1.Add grains to 5 gallons of cool water, slowly bring temp to 150F and hold for 30 min.
2.Remove Grain Bag. Bring Kettle to boil. Remove from heat and add Dextrose,LME and DME, stirring WELL.
3.Add first addition of hops, and bring to boil
4.after 30 min. of boiling add your second addition of hops
5.After 55 min of boiling, place in your last addition of hops, and add Irish Moss too.
6.Strain (of fish out your hopbags is your smart) the wort.
7.Chill to at least 80F. and throw into fermenter.
8.Add yeast.
9.SECONDARY FERMENTATION: Rack your new beer over to another Bucket type fermenter. Don't worry too much about a little trub in the secondary.
10.Add your 5 pounds of Frozen Strawberries into your freshly racked beer. it's gonna take a week or so to ferment the fruit. Use your best judgement.
11.THIRD FERMENTATION: Carefully rack over your Strawberry infused beer into a carboy, not to get too much trub in your final fermentation. Plug with an airlock and wait till all your sediment settles to the bottom.it may take a week or two.
12.BOTTLING: Rack the finished beer into your sanitized bottling bucket, add 1/2 cup of Vanilla Extract. Bring I cup of water to a boll and add 1 cup of Dextrose, boil for 15 min. add to Bottling bucket.
