Special Instructions

1.
Prep pumpkin 1 day before brew day.
2.
Cut to 6 inch slices. Remove seeds and arrange slices on cookie sheets.
3.
Sprinkle liberally with brown sugar. Roast in the oven @ 375F until soft. about 2-3hr. Remove and let cool.
4.
Scrape the pulp off the skin. Then dump the pulp and juice into a bowl and refrigerate.
5.
On brewday, place pumpkin flesh into a mesh bag and boil for 90 minutes.
6.
8oz dark brown sugar @ 90min. boil.
7.
5 tsp ground Saigon cinnamon @ 5 min left of boil
8.
1 tsp of ground nutmeg @ 5 min left of boil
9.
1 tsp of ground ginger @ 5 min left of boil
10.
3 tsp of vanilla extract @ secondary
11.
Ferment @ 62F until FG reached then bottle.
