Special Instructions
1.Prep pumpkin 1 day before brew day.
2.Cut to 6 inch slices. Remove seeds and arrange slices on cookie sheets.
3.Sprinkle liberally with brown sugar. Roast in the oven @ 375F until soft. about 2-3hr. Remove and let cool.
4.Scrape the pulp off the skin. Then dump the pulp and juice into a bowl and refrigerate.
5.On brewday, place pumpkin flesh into a mesh bag and boil for 90 minutes.
6.8oz dark brown sugar @ 90min. boil.
7.5 tsp ground Saigon cinnamon @ 5 min left of boil
