Mash Steps

Special Instructions

1.
Collect and heat 2.5 gallons of water.
2.
Pour crushed grain into supplied mesh bag and tie the open end in a knot. Steep for 20 minutes or until water reaches 170?F. Remove bag and discard.
3.
Bring to a boil and add the 3.15 lbs Dark malt syrup. Remove the kettle from the burner and stir in the Dark malt syrup.
4.
Return wort to boil.
5.
Add 1 oz Summit hops and boil for 60 minutes
6.
Add 1 oz Chinook hops and 6 lbs dark malt syrup 15 minutes before the end of the boil.
7.
Add 1 oz Centennial hops 10 minutes before the end of the boil.
8.
Add 1 oz Cascade hops 5 minutes before the end of the boil.
9.
Add 1 oz Centennial hops and 1 lb corn sugar at the end of the boil.
10.
Cool the wort
11.
Fill primary fermenter with 2 gallons of cold water,
12.
Add more cold water as needed to bring the volume to 5 gallons.
13.
Aerate the wort.
14.
Add yeast once the temperature of the wort is 78?F or lower (not warm to the touch).
15.
Seal the fermenter
16.
Ferment for 10-14 days, typical 14.
17.
Rack to Secondary.
18.
After 4 weeks, bottle or keg.

Notes:

Awesome tasting. A almost thick chocolate taste without being thick. Mild viscosity, very smooth, slaps you in the face with shear awesomeness. Not heavy on the hops, left out the secondary addition hops for a sweeter aftertaste. Worked. Not heavily sweet, just right. Has a slight zing that reminds me of a wild bacteria or Guinness strand. Just that tangy, weird goodness. Might be the hop blend. Highly, highly recommend. Might take this down for a family. So get in.

    So that definitely worked. Highly recommend. Taste is thick chocolate but mild viscosity. A strange but familiar zing, like a wild bacteria or Guinness strand. Definitely making another batch, maybe a double. The scent is amazing as well. This winter is going to get sloppy. 9% cold cocoa. Ja, es ist dunkelschwarz bier.

    Getting ready to brew a 10 gallon batch for the winter. This makes my favorite list of all beers, commercial included. Top 10. Might make a small change to a 5 gal batch and increase the chocolate taste.
