Special Instructions

1.
Disolve Honey in 3 Litres 90C water in 5 L pan
2.
Steep at 60C - 65C for 30mins
3.
Flameout - add 1.25ml K2CO3, 2.5ml Fermaid K, 1.25 ml DAP and 1 crushed campden tablet. Stir.
4.
Place secure lid on pan and leave to cool at room temp overnight
5.
Transfer must & flower heads to 4 L wide neck Jar,
6.
Pitch yeast
7.
Ferment at 18C
8.
After 2 days strain must into 5 L FV, discard flower heads
9.
Top up to 5 L with water, add remaining Fermaid k and DAP
