Attempt at re-creating this beautiful IIPA by targeting the ingredient list and final ABV/IBUs on the Drake's website, since there is NO current clone recipe out there that I can find...if you have one send it to me! My friends and I love this brew, and want to make one for ourselves. Single decoction is necessary to bring out maltiness and boldness of this brew; double and triple decoctions would bring out even more malt character. 4.
Recirculate, Sparge, then run-off into boiler.
5.
Boil: 90 minute boil. Add Yeast Nutrient, Whirlfloc (Irish Moss) @ 15 min prior to FO. Add Cascade @Flame Out/HopStand for 15 minutes, then Whirlpool 10-15 minutes.
6.
Chill down to pitching temp (~70 degrees), pitch yeast.
7.
Primary Fermentation: 7 days. Rack to Secondary, harvest yeast; add dry hop additions.
8.
Secondary Fermentation: 7-10 days. Bottle when Secondary Fermentation not active for 2 days. Best to measure FG and make sure fermentation is complete - get it to at least 1.035.
