Jan 02: 18.6°P (1.075 SG). Everything went pretty much to the schedule. Was in a rush towards the end and not sure if the wort got aerated as much as I'd have liked. Used an aeration stone though, so may be okay.Jan 03: Going good, large krausen has formed and airlock is bubbling away steadily. Jan 17: Bubbling very slowly. 7.6°P (1.008 SG). I'll give it another week.Jan 24: Begin lagering at 0°C-- I didn't mean to lager it this long! Worried I may have crashed too much yeast out, so I'll suck ...
