Special Instructions
1.Heat 9 gallons of water (2/3 RO, 1/3 filtered for all water)to 167°F to reach strike temperature in milled grains of 148.5°F
2.Hold mash at 148.5°F for 70 minutes (stir after 45 minutes) then raise temperature to 154°F for the balance the 90 minute mash
3.At end of 90 minutes raise temperature of mash to 167°F using flame and sparge water
4.Sparge using 18 gallons water heated to 174°F
5.Continue sparge until complete having added 1gram Fermcap and starting boil flame after 18 gallons is in the kettle
6.Boil for 75 minutes. First hop addition with 60 minutes remaining, 3 whirlfloc tabs with 15 minutes remaining, 2nd hop addition with 7 minutes remaining.
7.Complete boil and whirlpool when wort cools to 194°F.
8.Cool wort. Add 38 grams Safale 05 after 2nd batch is in the fermenter
