My son's favorite brew. I brewed a test half batch last April. It was good enough to retry in a full batch, with some minor modifications: 1) changing base malt from all 2 row to 1/3 maris otter 2) lower SRM by changing from Crystal 90 to Crystal 70; 3) lower IBU by adjusting Golding to 1.75 oz. ; 4) keeping ABV slightly higher than the Scottish Export 80/- style guide because, well, I like it that way; 5) adjusting water profile to similar to Edinburgh (no idea if Four Peaks does this.) The hops do need to be checked for AA when bought from Grow Masters.

Notes:

Tasted the oak spiked beer. Surprisingly, it was noticeably more vanilla-y than the vanilla spiked batch. But, it was not overly strong at all. Mouthfeel was in between the un-spiked and vanilla bean spiked brews. Overall, the three make a very good batch of Scottish export-80, though, not much like the Kilt Lifter (4 Peaks Brewing) of which it is supposed to be an approximate clone.

Notes:

Tasted the vanilla bean spiked beer. It is much smoother in the mouth than the un-spiked version. I'm very happy with it. The head on the beer has very small bubbles, started at 1/2 inch with a proper pour, and lasted to the end -- about 10 minutes.

Notes:

The UN-spiked beer is delicious. Mouthfeel is slightly dry. I probably should have mashed at a higher temperature. December in my garage is a hard time to maintain mash temperature.
