Special Instructions
1.Heat 12.5 gallons( filtered water with 3g CaCl and 1g table salt) of strike water to 171°F
2.Dough in with milled grains to reach strike temperature of 154°F
3.Heat 16.5 gallons sparge water to 174°F
4.For mash hold at 154.5°F for 90 minutes then temp to 167°F
5.When mash temp reaches160°F start sparge with sparge water and re circulator finish raising mash to 167°F
6.Stop sparge when 25 gallons have been collected
7.Bring to rolling boil for 90 minutes adding hops according schedule
8.After 90 minutes cool and whirlpool
161.With wort in fermenter at 68-74°F pitch 38 grams Safale 04 or repitching according to availability
