All Grain Gueuze homebrew recipe. This homebrew recipe uses the following ingredients: Pilsen - UK, White Wheat - US, Chinook Hops, Mt. Hood Hops, American Farmhouse WLP670 Homebrew Yeast, Himalayan Pink Salt (10 Mins Left), Fresh Ground Coriander Seed (10 Mins), Warfloc Tab (10 Mins), Whitelabs Yeast Nutrient (~½ Teaspoon), 800mL Yeast starter (2 days).

Mash Steps

2.5 day Acid rest. Sparged (no vorloaf) into 6.5 gallon glass carboy. Fill to absolute top. Keep at 115 degrees with fermwrap (kettle souring)

Special Instructions

1.
Boil 3 gals strike water, then reduce to 160 for mash in (target mash temp 151)
2.
Mash in all grains slowly while stirring. Mash for 60 mins.
3.
Boil 5 gals sparge water (boil to kill stuff/reduce oxygen). Reduce heat to 135 degrees to sparge
4.
After 60 min mash @ 151, remove cover and reduce heat to ~130 degrees. (90 mins total mash time)
5.
Add handfull of (prefferably unmilled) white wheat to sanitized hop bag and insert into empty 6.5 gal glass carboy.
6.
Sparge (no vorloaf for more grain material) into carboy over unmilled grains.
7.
Keep at 115 for 2-3 days
8.
Siphon into brew kettle and continue brewing as normal with additions
