1.Heat 16 quarts to 167F and mash-in with 12 lbs of grain
2.Mash-out and the sparge @ 172F to produce 6.5 gals of wort
3.Record pre-boil gravity and bring wort to boil
4.Allow wort to boil for 60 minutes, adding hops, yeast nutrient, irish moss
5.Chill wort and then pitch yeast, fermenting @ 66F to 68F
