All Grain Alternative Grain Beer homebrew recipe. This might have been called almost impossible rye. First mashed at 40C with 1 litre per kg. Raising this to 69 was very problematic. Most of the sparging water had to be used to raise the temp. The wort obtained was very cloudy and had to be sieved before boiling. After boil was the same. Fermentation was no problem. But once again fine filtering was needed before bottling. It looked awful. Cleared well and the resulting beer was clear, a good red brown colour and 5.4% ABV which in the circumstances was acceptable. Taste was very good, well rounded and soft with a nice rye background flavour. I was projecting a 45% rye beer but am putting that off for a while. Verdict learnt quite a bit about handling higher rye ratios and the problems and how to overcome them. Wouldn't recommend a high rye beer to a beginner brewer as you need to be flexible and react to the unfolding process. A worthwhile project and a good well received product. A longer run will be my next step with Rye.
