I've never made a Heather Ale before, so wanted to do something new as I get back into brewing again from a long break. I took 3 different "authentic-ish" recipes that I found online, and merged them into this one. To clarify, I am not claiming that this is an authentic recipe since I am putting hops into it.

Special Instructions
1.Add the Mugwort and Gypsum into the grains for mashing
2.Mash in 6 Gallons at 163 D. Hold at approx 153 D for 90 minutes
3.Mashout at 153 degrees over 15 minutes, Lauter as needed, Sparge into boil kettle until 7 gallons is collected
4.Start heating the Wort, and slowly stir in Honey until dissolved
5.Boil the Wort for 90 minutes
6.At the 60 minute mark, add the Meadowsweet to a hop sock, and continue to boil
7.At the 20 minute mark, add the Cluster hops to a hop sock and continue to boil
8.At the 10 minute mark, add the Whirlfloc tab
9.Just before bottling/kegging, boil 2 cups water and add remaining 1 oz of Heather Tips. Simmer for 30 minutes (there should be approx 1 cup left), strain Heather Tips out, and mix into the beer. Bottle or Keg as usual.
