I've never made a Heather Ale before, so wanted to do something new as I get back into brewing again from a long break. I took 3 different "authentic-ish" recipes that I found online, and merged them into this one. To clarify, I am not claiming that this is an authentic recipe since I am putting hops into it.

Special Instructions
1.Mill grains twice.
2.Preboil and set aside 3 gallons of water (on stove) for topping off at the end. Make sure lid is secure.
3.Will need to sparge, so make sure 1-2 gallons of water is in the boil vessel and ready to go at the end of the Mash
4.Add the Mugwort and Gypsum into the grains for mashing
5.Mash in 6 Gallons at 163 D. Hold at approx 153 D for 90 minutes
6.Mashout at 153 degrees over 15 minutes, Lauter as needed, Sparge into boil kettle until 6.5 gallons is collected
7.Start heating the Wort, and slowly stir in Honey until dissolved
8.Boil the Wort for 90 minutes
9.At the 10 minute mark, add the Galena hops to a hop sock and continue to boil
10.At the 10 minute mark, add the Whirlfloc tab
11.At end of boil, top off if needed with pre-boiled and cooled water to reach 5.25 gal total wort
12.Just before bottling/kegging, boil 2 cups water and add remaining 1 oz of Heather Tips. Simmer for 30 minutes (there should be approx 1 cup left), strain Heather Tips out, and mix into the beer. Bottle or Keg as usual.
