May 19/24: Mashed in with 16.6L, 3.5ml lactic, 3g CaCl2 and 2.5g CaSO4

Hit 68C, 45 minute mash.

Sparged with 19.3L, 4ml lactic, 3.5g CaCl2 and 3g CaSO4
4.
Added honey at 5 minutes left.
5.
May 19/24 1pm: Pitched into 20C wort, FC set to 20C to start.
6.
May 20/24 630am: Big krausen and bubbling away at 20C. FC down to 14C for duration.
7.
May 21/24 6pm: Fermenting at laser temperature of 15.5-16C, bubbling away nicely.
8.
May 23/24 10pm: FC up to 19C to finish.
9.
May 27/24 10pm: Into basement at about 18.5C
10.
May 31/24 730am: FC down to 1C to cold crash. Laser beer at 18.3C.
11.
June 30/24: Bottling day! 20.5L at 19.5C with 5.08oz dextrose for 2.6 volumes.
