Jan 21/24: Mashed in with 16L, 3.5ml lactic, 3g CaCL2, 2.5g CaSO4

Hit 66C, 45 minute mash.

Sparged with 19.17L, 4ml lactic, 3.5g CaCL2, 3g CaSO4

Sparge/Mashout at 71C, 20 minute timer.

1/4lb brown sugar in at 10 minutes left.

Jan 21/24 1230pm: Pitched into 20C wort, set into FC set to 18C.
7.
Jan 22/24 5pm: Raised FC setting up to 18.5C, laser beer ay 19C.
8.
Jan 23/24 7am: Laser beer at 19.3C
9.
Jan 24/24 6am: Laser beer at 18.7C, krausen dropping. Added 0.5oz EKG DH and FC to 22C.
10.
Jan 25/24 6am: Krausen dropped but still bubbling. Laser beer at 21.7C.
11.
Jan 28 630pm: Into FC set to 0C to begin chilling.
12.
Feb 05/24: Bottling day! Bottled 20.5L at 22C with 5.2oz dextrose for 2.6 volumes.
