Oct 8/23: Mashed in with 18L, 4.5ml lactic and 2.5g each CaSO4 and CaCl2

Hit 66C, 45 minute mash.

Sparged with 18.5L, 4.5ml lactic and 3g each CaSO4 and CaCl2

Oct 8/23 1PM: Into FC set to 21C. Pitched into 21C wort. 1ml acid at 10 minutes left.

Oct 8/23 830PM: Krausen has already formed, bubbling has started. Laser at 21.6C. FC down to 16C.
6.
Oct 9/23 9PM: Bubbling furiously at 17.5C, set to 16C.
7.
Oct 10/23 5PM: Laser at 17.8C. FC up to 21C to finish.
8.
Oct 10/23 10PM: Added 2oz Belma dry hops.
9.
Oct 11/23 10PM: Taped over airlock holes to create spunding valve. Krausen is all gone.
10.
Oct 12/23 10PM: FC down to 10C to cold crash.
11.
Oct 21/23: Bottling day! 18.5L at 22C with 4.75oz dextrose for 2.6 volumes.
