Special Instructions
1.Steep the crushed malts in 1.5 gallons of water at 152?F for 60 minutes. In the last 5 minutes sprinkle the roasted barley on top to leach color. Remove the grain bag.
2.Bring the wort to a boil and add the East Kent Goldings hops for bitterness. Boil for 45 minutes.
3.Add the cinnamon stick, orange zest, rosemary, star anise, cardamom seeds, and cascade hops during the last 10 minutes of the boil.
4.Cool the wort quickly and transfer to a sanitized fermenter.
5.Pitch the ale yeast into the fermenter and seal with an airlock.
6.Ferment at the appropriate temperature for 1-2 weeks.
7.Optionally, add dried cranberries or cherries to the fermenter during fermentation.
