Special Instructions

1.
Add 5 gallons cold water to brew pot. Add steeping grains (in grain bag) and heat to 165 deg.
2.
Boil 300 ml water (covered with foil) for 5 minutes (for rehydrating yeast). Let cool to 80 deg. (Follow Kveik yeast instructions).
3.
Remove and drain grain bag and continue to heat to boiling.
4.
At boiling, remove heat and and fully dissolve extract(s).
5.
Bring to boil; start :60 timer & follow hops schedule.
6.
At :15, check temp of yeast rehydration water and add yeast if 80 deg.
7.
At :15 carefully place the cleaned and drained immersion chiller into the brew pot to sterilize.
8.
At :15 add the Irish Moss.
9.
At flame-out, add cold water to bring wort volume to batch size.
10.
Chill wort to 80 deg and rack to primary. Add water if needed to achieve final volume.
11.
Mix wort with sanitized spoon. Take and record OG.
12.
Pitch rehydrated yeast; primary at 80-90 deg until fermentation is complete (Kveik yeast, 3-4 days).
13.
For bottle carbonation: Add 140 g corn sugar to 500 ml water and boil for 5 min. Chill to room temp.
14.
Bottle and condition at 75-85 deg for 2 weeks until carbonated. Once carbonated, store at 65-75 deg..

    Medium-high carbonation 170 gr corn sugar was suggested by the original recipe. I dialed that down to 140 gr for the first batch.
