1 pack yeast. Fermented 62F for 2 days, then raised to 72F for two weeks.

Notes:

Wouldn't change a thing. This was exactly what I wanted it to be after a month or so of fridge time in the keg. Slight funk, lots of phenolics with a bit of banana, nice toast, caramel, and fruit notes. Yeast really did its job in this brew!
