Special Instructions
1.Bring raspberries and table sugar to soft boil for 10 minutes and cool
2.Mix all juices, apple juice concentrate, raspberries, and tannins in fermenter. Let sit for 24 hours.
3.Add lactose to enough distilled water to dissolve. Add scored basil leaves. Heat to 180 and let cool.
4.Strain lactose syrup and add to primary.
5.Add peeled and slice ginger to primary.
6.Rehydrate yeast and pitch. Cover must with a thin towel.
7.Ferment for 7 days. Remove ginger and raspberry solids.
8.Add dried juniper berries. Allow to steep 24 hours.
9.Remove juniper berries and cold crash for 48 hours.
