Using advice from Genus Brewing (https://www.youtube.com/watch?v=Lgb8NfVFvic) - less dry hopping, more whirlpooling, no keg addition. Batch made 10/10/2022 did not sustain high mash temp - started at 157, dropped to 151 by the end of the mash; extended mash time by 20 mins. Boil off was more than intended; ended up with only about 23L so I topped it up to 25L in the fermenter. Forgot to adjust for refractometer calculator when finding point at which to start dry-hopping and only got to it at 1.013

Mash Steps

Special Instructions

1.
Mash at 158 F - strike water at 171 in the cooler - this will require decoction mashing
2.
Add 5g Calcium Chloride to strike water
3.
"Whirlpool" - stir wort until it reaches 180F, add 20g Mosaic
4.
Wait 5 minutes, cool to 160F and add 20g mosaic and 20g Simcoe
5.
Wait 5 mins, chill to 150F and add 20g Mosaic and 20g Simcoe
6.
Wait 5 more minutes, then chill to 64F
7.
Start fermentation at 64F - put on heat belt when first dry-hop addition happens
8.
Add 15g El Dorado when SG reaches 1.022/1.02 - ~10 brix before refractometer adjustment
9.
Last dry-hop the next day after first dry hop: 15g Mosaic 1 day
10.
Keg 1 day after 2nd dry hop addition, even if fermentation is still slowly happening
