used tap water treated with 1/4 campden tablet per 5 gallons. 1st 1.078. 1.033 2nd. 3rd 1.022 Last runnings 1.012. Final 1.5 gallons collected used washed US05 from 6/20. Didn't plan ahead for starter, just dumped 1 jar into fermenter at 9 pm sunday evening. Fermentation started slowly Monday AM. By tuesday, was fully going. Temps in mid 60s in basement Sunday through Friday. put in fridge to cold crash wed, 7/25 ended about 5.6 ABV

Notes:

Tasted while taking initial FG reading from the fermenter. Very mild, no bitterness, still cloudy. Amazing difference using 05 yeast compared to the kolsch yeast. had a pronounced alcohol odor (not surprisinng for a green stage 5.6 ABV brew) with NO hop aroma. I expect this to finish with less flavor complexity than the original recipe more toward a light blonde ale or mild cream ale.
