7May2017 - 5 gallons of sparge into blue beverage cooler (first time I've tried this) - 3 stage spage - blue cooler into 8 gal boil kettle (where mash occurred) into white bucket (and second white bucket because 7 gal runoff. All 7 gal dumped back into boil kettle for boil. Had to watch boil carefully for about 30 minutes to avoid boilover, but in the end about 5.3 gal to primary at 1.051 gravity. Bitter very nice flavor or fermentor wort.
14May2017 - to secondary, 1.012 gravity, added 1oz HBC, 0.5 oz Citra, 0.5 oz Hallertau hops. Taste is light, slightly bitter, session-like, very nice, not much aroma. Just slightly over 5 gal into secondary.
21May - added second dry hops 1oz HBC, .5 Citra, .5 Hallertau
25May - bottled 27 22-oz bottles 1.012 FG. Nice aroma and bright hps taste - a good, dry session IPA flavor

Gravity Estimates
Based on boiling 7.00gallonsliters at 1.044 for 60 minutes, this will decrease your wort by 1.00gallonsliters, bringing your after boil OG to 1.050.
You wanted an OG of 1.051. It looks like it will be under.
