Spring Cleaning Ale Brew Session

Wanted a Blonde ale around 1.050 SG, but hit higher efficiency than expected. THis will be a strong cream ale instead. Yeast starter with 3 month old notty 3rd use (not washed). Started right away. 1st running 1.084 3 gals collected 2nd 1.0331 3rd 1.020 2nd of fly sparge 1.014 7.25 gallons collected 6.5 gallons post boil in kettle, yeast added around 10 pm. fermentation started next AM (Sunday) with no delay. Continued rapidly through early week. Slowed to 1 bubble per 5 seconds by wed. SG only down to 1.032 Sunday and bubbling at 1 per 6 seconds. moved into the basement since temps rose to upper 70's in garage. Added AE, agitated krausen and allowed to continue as fermentation picked up at at 1/4-5 seconds at 65-70F Sunday through Wed before slowing again to 1 per 6-8 seconds Monday, May 8. Stubbornly still fermenting 1 per 6-7 still on May 16. Finally slowed to 1 per 15-20 seconds May 22. FG at 1.009=5.7ish ABV.

Notes:

Gave up quite a citrus aroma while racking to the keg. Not getting the alcohol flavor but hints of lemon and a bit of grapefruit linger as aftertaste. Mild sweetness and not much bitter flavor. very mild brew for moderate ABV.

Notes:

Took tasting while grabbing a FG reading. Has a slightly sweet and mild flavor, with a bit of an alcohol aftertaste at this stage. Reminiscent of a blend of my 3rd times a charm pilsner and rotating crops recipes. Going to leave this to clean up at room temp for another few days, cold crash, and put in keg for a couple weeks to cold condition and hope it mellows out.
