Sat: 3 pm started mash. hit a bit lower than expected. will mash longer. confirmed conversion complete with iodine test. First runnings 1.078 (3 gal) Saturday evening 6 pm second runnings 1.037 (2 gal). final runnings: 1020 1.054 OG yeast starter stalled for three days. added to wort second day, still awaiting fermentation Tuesday in basement at temps in mid 60s. Cold fermented: Fermentation began vigorously overnight Tues by Weds. am. Moved to garage to low 50's temps, down to upper 40's for periods. Fermentation continued around 50F through weekend. Slow, steady (1 bubble per 2-3 seconds) for several days. Cleaned up in garage with average temps in 50's for 3 weeks. Ended 6.69 abv. Much higher than intended

Notes:

Took this camping. Noticeable alcohol flavor especially after drinking the brunnette kolsch on rye of mine. not overly bitter. dark straw color. Not my favorite brew. Needs either more crystal malt and hops to add flavor or less base malt to lower ABV. This would be better as a lower ABV, lighter brew.

Notes:

sampled while taking FG reading. crisp pilsner flavor, no esters or off flavors. Has a balance between the cream of three crops and kolsh on rye flavors leaning toward kolsh. Higher ABV than expected, but alcohol flavor isn't pronounced. I like where this is headed so far.
