--- Brew Day --- Single infusion mash of 5.25 gallons at 158 F; starting mash temp 150 F (half a campden tablet in the strike water); Digital thermometer read 152 at the end of the mash, so analog may be reading a couple of days low. Lauter at 60m; Refractometer reading of 1.047 (refractometer) on first runnings Sparge w/3.5 Gallons @ 175; second runnings at 1.021 (refractometer) Started boil 6.25 @ 1.034 (refractometer) Pretty vigorous boil, more loss than usual; bittering charge of .4oz warrior at 60 minutes; 1.5oz each of EKG and Fuggles over last fifteen minutes (15, 5, flameout); 15 minute hop stand after flame out hop addition. 5 gallons at the end of the boil; transferred ~4.5 into primary; Hydrometer read 1.042 @ 68.8F, Corrected to 1.043!!!!!! Racked out pretty clean, not a lot of hop debris into the fermenter --- 2/21/2017 --- 7am: starting to see some bubbling in the fermenter 5pm: nice active fermentation and an inch or so of krausen, lots of fine CO2 bubbles --- 2/22/2017 --- 7am: even more activity than last night --- 2/27/2017 ---- Transferred into secondary onto .5oz EKG and 1oz Czech Saaz (.5oz fuggle planned didn't smell great, had saaz in freezer); gravity was 1.012; Will take another reading when kegging. Tasted good, delicate malty quality with nice hops; slight green apple flavor so needs another few days before chilling. --- 3/3/2017 --- Transferred into keg and put on 35psi to force carb.gravity was 1.010

Notes:

initial sharpness from the dry hop has faded over the last week and half since first tapped to a nice earthy/spicy flavor. Tastes like a really nice British bitter. Could have a little more malt to the body, might consider increasing the biscuit/victory malt in the next batch (and keeping the dry hop as EKG)
