Brewed Saturday night. Used 2 lbs of pilsner I had leftover with 4 lbs of 2 row. Kolsch yeast is all I had 1.090 first runnings.1.042 second runnings.3rd 1.020. Double batch sparged. no yeast starter. monday morning, still not fermenting. Added second jar of washed yeast Tuesday (2/8) evening. Fermentation started Wed. Night 2/9). temps in mid 60's Still fermenting 2/14 (1 bubble per 4 seconds). temps in low to mid 60's during fermentation. Finally fermentation slowed to a crawl. moved to garage (temps around 50F) on 2/24. temps rose to 60s 2/28 FG 1.003= 5.38?V

Notes:

slightly bitter, classic "c hops" flavor. Lost the 'sazz-like' flavoring I picked up at packaging time. minimal head retention with no lacing. light yellow coloring with slight haziness. would not brew this again in favor of one of the pilsner or kolsch recipes I've been perfecting.

Notes:

sampled when finished fermenting and cleared in carboy. ready for packaging any time now. light, bright golden yellow color. very clear. surprisingly bitter finish, with a saaz-like start. not my favorite brew. We'll see if it mellows with some cold keg conditioning.
