(Include any important notes from brew day until tasting)
Probably a 1/2 gallon short of sparge suggestion (4.2 instead of 4.70 gal) due to lack of capacity with boil kettle used for mashing.
left an oz. of Cascade out of hopstand for dry hopping instead
OG 1.050, 5 gal into fermenter, seems a bit cloudy
12/4/2016 - about 15 hours later fermentation has begun
12/5/2016 - 24 hours later (about 40 hours total) fermentation still proceeding but seems to have slowed down - was there lots of activity in my absence? I hope so, or this will be a slow one
12/8/2016 (5 days) gravity is 1.02, so well along - drawing sample from bottom through valve the beer is quite cloudy but nice light orange, slightly aromatic, nice bitter very good taste already
12/13/2016 (10 days) gravity is 1.014, into secondary with 1oz Citra (still have 1 oz Citra, 1oz Cascade which I'll add in 2 or 3 days. Plan to bottle in about a week. Aroma and taste is excellent, especially given no dry hop yet. About 4.3 gallons in secondary, fairly cloudy, orange color.
12/17/2016 - added the dry hops 1oz Citra, 1oz Cascade
12/22/2016 - gravity at 1.012, bottle - 18 22oz 2 more angel share@22 1 growler (also angel share)
aroma is excellent tropical CAT PEE!! Crossed fingers this keeps the aroma through the carbonation because it is awesome today. Awesome!
so, 1.050 to 1.012 >>> 5.0% ABV which seems just about perfect to me.
