First time brewing: used homegrown 1st year cascades (since mystery wasn't ready) and Chinook. Will use as benchmark taste test for using same recipe, but swapping fresh cascade for fresh 'mystery hops' next year. Also used what few centennial cones i got year 1 (with Tim's 1 oz wet Chinook). Hit mash high at 158. Cooled down to 156 after 10 mins then closed up and held for 50 mins. used all fresh picked (wet) hops according to the following schedule: about 1.75 oz cascade at 60 1.75 0z cascade at 30 1.0 Chinook plus .25 centennial at 10 Post-boil volume was lower than usual. not sure why went from 6.1 Gallons to under 5 after the boiling process. not a lot of wasted volume in kettle, but hops soaked a lot up for sure. Would need to account for lost volume due to soakage if using more hops in recipes. Used bells yeast washed (2nd use, about 2 months old). Fermentation started around 12 hours post-pitching. Started fermentation around 67 F for first few days, dropped to mid 60's for 6 days, then rose to upper 60's for remaining clean-up fermentation period (no racking to secondary). Only got 46 bottles packaged at 5.8 ABV. Ended up more of a Blonde Ale than a pale ale as originally targeted; albeit slightly darker and a tad high ABV. IBU calculated 21.7, 5.8 ABV, 5.5 SRM

Notes:

Light hop flavor reminiscent of a lager style, albeit with higher ABV and SRM. Still needs time to carbonate and bottle condition. Has my classic "homebrew" flavor. Not sure if it's the cascade or nottingham I'm picking up, but hoping it mellows a bit in a few weeks.

Notes:

First bottle sampled after a week in the bottle. Needs more time to fully carb and condition. Will hold out final judgement. First impression: very drinkable. Lots of character: plenty of residual sweetness, hint of citrus hops.

Notes:

Sweetest of my brews so far as a tested by the fg. Got a 5.8abv brew with the higher mash temp. Should be a mild yet flavorful beer with. Lot of character.
