(Include any important notes from brew day until tasting)
I started brewing after 1pm and finished up right at 7 with cleaning and everything.
added corn sugar last 15 minutes of the boil. I had 1#2oz so I just added it all
Sparging only took 30 minutes. I'll see how it affected FG and make an adjustment
My calculations were better this time with mashing and sparging. I got exactly 7.5 gallons in my boil.
I'm a little worried about my yeast handling. I reconstituted the yeast but i didn't sanitize any of the stuff or boil the water. Oliver T's only had 1 packet of my yeast but i needed two. Next time just dump the yeast on the wort.
I let the flame out hops sit for 15 minutes then I started the wort chiller but didn't agitate it until another 15 minutes had passed.
My oxygen tank ran out after about 14 seconds
Fermentation started about 3pm the next day. I started fermentation in the basement where the ambient temp was 68 the day i brewed it. I moved it upstairs at 12pm the next day because I saw no action in the airlock.
OG was down 7 GU's. i had a shorter sparge so maybe my efficient. or my mash PH was high and that affected it.
I still need to work on my water chemistry.
6/18 I checked the gravity bc the airlock stopped. It still had good krausen and the gravity was at 1.012. I'm hopeful that it gets to 1.008 or so.

Gravity Estimates
Based on boiling 7.50gallonsliters at 1.046 for 60 minutes, this will decrease your wort by 1.00gallonsliters, bringing your after boil OG to 1.052.
You wanted an OG of 1.079. It looks like it will be under.
