5/10/15 - began fermentation at 17.5C
5/14/15 - Raised temp 0.5C per day until it reached 20C. Today raised to 21C to encourage the last bit of fermentation. Airlock activity has pretty much stopped. Took at reading of 10.2 brix which puts it at about 1.017 and 9.3% ABV. Took a small taste, not much late hop flavor, mostly bittering. Starting today I will be rousing the yeast by shaking in a circular motion 3x a day in hopes of getting down to around 9.5 brix.
5/17/15 - SG down to 9.3 which converts to about 1.013. Target reached
5/21/15 - May have misread previous gravity, today i took 9.6 which converts to 1.014
5/25/15 - Transfer to secondary and add first round of dry hops. Tastes promising, no detectable off flavors. Brix measured at 9.6
6/7/15 - Botting Day. Roughly 2.5 gallons
