Pitched 500mL WY1275 from bitter, set controller to 68F
11/22, Rockin' and rollin'. Set to 69F. Will move up a degree each day until 71F.
11/27@1.009@71F. Tasting great, digging the hop blend. Complex, interesting, but not overblown. Set temp to 68F. Will recheck in a couple days and keg with dry hops.
Tapped many weeks ago. Pours a warm golden tone, with a white cap of foam. Aromas of lemon scone, grapefruit peel, and sweet summer blossoms. A drying bitterness across the palate, reminding you you're drinking an IPA. Medium bodied, with a much more sappy, pine-leaning hop flavor. Subtle bready malt notes float beneath the hops, mostly undetected. Finishes long and sticky with hop oils.
A good thought experiment. The hop choice makes it feel old(er) school than the other ingredient choices, but still feels like a flavor from the past.
