Set temp controller to 50F, will pitch yeast at or below 55F, then set controller to 51F. Pretty easy brew. A little surprised at the pH of the first runnings, but nothing that was out of spec. Could've used a touch more acid at EOB. Excited for this, perhaps because it may get some actual lagering time before serving. Future batches, I think the OG should get nudged down to 1.044, and then it's pretty much in spec with style cat. Will revisit that thought at time of tasting.
11/27@1.016@58F. Tasting great. A bit more attenuation needed, but right now its clean and delicate tasting. Bumped up to 60F to wrap up.
