Pre-boil gravity came in shy, so I bumped up the boil time to 90'. Should've still missed the gravity by a couple points, but it looks like I boiled a bit too hard and lost a bit of volume. Yeast was harvested just a couple hours before and ready to go--beer was blowing off about 6 hours after KO. This morning (11/9) set controller to 64F.
11/13@1.012@66F. Pretty yeasty, but showing promise. Will recheck the gravity once the krausen drops.
11/16@1.009. Flavor is sharpening up a bit. Will keg with dry hops 11/18.
12/3. Straw colored, excellent clarity, white foam. Great lacing. Clean citrus and pine sap aromas. Medium-light body, resinous hops throughout. Clean crisp finish.
Pretty darn tasty. Replacing Crystal hops with something punchy would be nice, Simcoe would be my first choice. Though there's a restrained herbal quality the crystal brings that I think is nice in the beer. Needs a bigger dry hop or late hop or both.
