Brewed 11/25 4.83 HLT pH 150.7F mash temp 5.42/1.079 first 5.63 2nd 12mL phos to MT 6.15/1.014 final 16mL phos to BK 5.21/1.049 7mL phos at EOB 1.058-1.059 O.G., 5.13 post-boil Smooth and easy. KO'd at 68-70F. Inkbird and carboy heater just showed up. Will keep at 68F for the first couple of days. Took about 36 hours to get rolling. Kept it at 70 to start, then turned it down to 68F. That didn't get it to cool down, however! This thing is rolling, hanging out just below 70F. 12/1@1.022. It's slowing down. Huge tropical hop aroma and flavor on this one. I don't think I've brewed something quite like this in a minute. Set temp controller to 74F. 12/4@1.017. This beer is crystal clear, I'm guessing I'm not going to get more than another point out of it. Will likely keg with dry hops in a couple days. 12/6@1.014. Surprised to see more attenuation. Will check one more time in a couple days and keg with dry hops. 12/27. Tapped 7-10 days. Warm golden hue, fairly clear with a sticky, lasting foam. Clean, fresh cut peach cut peach and pineapple. Zesty citrus, hop and malt sweetness. Medium-bodied. Clean, slightly sweet finish, with a lingering pithy hop bite.
