Had a bit of fuckery. HLT was leaky, which I kinda anticipated, and thought I fixed. The propane tank hooked up started to dwindle, and when I went to swap it, realized my LP regulator was fucked. Tried the backup burner I have, and was getting really poor boiling action. Finished the last 20 minutes on the stovetop. Better than the alternative, but consequently didn't get the boil off I was anticipating. O.G. probably would've been a couple points higher had that not happened.
Different problem--figuring out what pH to target in the HLT when using all RO water. This has been an ongoing issue of having way out of range values for the middle to final runnings, and it's really only happening on these all RO brews. Maybe I need to go back to blending water, even if it's low amounts 25/35% tap.

5/15. Tapped a week ago. Not really sure what happened to this beer, but it really reminds me of saison dupont's flavor. Which certainly isn't Kolsch. Probably going to dump this. Everything seemed to go well with fermentation packaging.
