Distillers Malt Wheat Experiment Brew Session

Brewed and chilled in the kitchen. It worked out well though I learned that I have to fill the chiller with liquid first and then the feed tube to the pump to get everything to work. This will be my last BIAB for awhile as I'm going back to using a mash screen to up my efficiency once again. The Vic Secret is very pungent so I hope that this carries over to the finished beer. I hit my pH spot on with hand waving amounts of Gypsum and CaCl additions; I'm glad that I found the little sachets of pH calibration solution and it encourages me to use the pH meter for whatever reason. 1/8 - This was very sluggish to start fermenting and never did get the airlock rolling a lot. I am adding the dry hop today and will let it marinate for 4 or 5 days before bottling.

Based on boiling 3.45 gallonsliters at 1.035 for 30 minutes, this will decrease your wort by 0.50 gallonsliters, bringing your after boil OG to 1.040.

You wanted an OG of 1.041. It looks like it will be under.

Notes:

Pours very pale yellow with 1 finger of foam that dissipates slowly. The aroma is dense hop resin and pine, perhaps a little lemon brightness as well. The flavor follows the aroma however the intensity keeps building over a period of 5 seconds and then ends with a profound bitterness that is nearly too bitter and it certainly lingers. Body is medium and nucleation is sharp. Overall, the aroma and flavor are great but that bitterness just kills it. People talk about 90s IPAs having tongue scraping IBUs and this is that. The bittering charge and other boil additions all need to be reduced for better balance. The fact that it's 80% wheat isn't evident at all so that's a bummer. 2 stars as I would be disappointed if I bought this in a bar.
