Strike temp too hot for p-rest. Added almost 1/2gal RO (room temp) to get temp down to 134F. Held for 15 mintues. Added 1/2 gal water to HLT to hit sacch temp. Overshot it a good bit., and added about 24oz tap water to get down to 153. Held for 30 minutes. Mash ph 5.11. Removed a third of the mash and performed a decoction, boiling for 15 minutes, then adding back to main mash. Hit 165F mash out temp.

-5.17/1.050 2nd runnings.
-5.45/1.010 final runnings.
-5.13/1.038 pre-boil.
5.20 post-boil, 1.050 O.G.
Pretty easy (though long) brew. Didn't have time to wait to pitch yeast. Pitched 2 packs at 68F, in the ferm chamber. Should be down to temp in a few hours.

10/28 Began lagering
12/10. Tapped 2 weeks ago. Deep golden color with thick lasting white foam. Herbal hops and sweet malt aromas. Hints of lager fermentation in the nose. Prominent malt sweetness that gives way to a substantial bitterness, and a subtle grassy, herbal European hop character. Medium-light body, with a clean, dry finish.
Couple complaints I had with this beer. Number one was hop quality. The Saaz seemed a bit depreciated. Also, the malt character was a bit over the top, and I think that was only due to a longer decoction boil than necessary. I would drop the boil time on the decocted segment to 10 minutes. This beer-style showcases both ingredient selection and process, and there is no room for error on either end of that spectrum.
