Initial pH came in around 4.85, probably because of the large amount of dark grains and CaCl/CaSO4 additions. I added quite a bit of NaHCO3 to get pH back up to 5.35. My actual process was steep specialty grains for 30 minutes, add LME to achieve desired gravity, adjust pH, add FWH/Whirfloc/yeast nutrient, heat to 175F, steep whirlpool hops for 30 minutes, and then rack to fermenter to chill overnight. Total brew time was about 1.5 hours with clean up. 5/3 - yeast pitched this morning. Fermentation is still sluggish about 12 hours later but there is activity. 5/4 - dry hopped today. Fermentation is going strong. 5/13 - bottled today. Tastes like a brown ale. There's a definite roast character there that I'm not very fond of.

Notes:

Pours brown with 2 fingers of stiff foam. Aroma is a mix of candy apple and Pepsi. Flavor is pretty much the same thing though there is a malty flavor on the end, somewhat of a light roast flavor like wheat bread crust, and a touch of bitterness; there's a sort of sharpness to it that I can't pinpoint whether it's the bitterness or the malt roast. Body is medium and the nucleation is a bit sharp. Overall the beer is okay as it's out of balance, very intense in hop and malt, creating a somewhat unpleasant experience given that it's a candy apple flavor. It's interesting but it would be hard to have more than one. 2 stars.
