Had 10g of Willamette and Styrian Goldings left over, so throwing that in at 10 mins. Could account for age of hops too (nearly 2 years old in freezer). Used boil kettle with brew-in-a-bag. Strike water 165F. 7.5 mins 159F. Pre-boil gravity 1.040 which should result in a 1.047 OG (high). Skipped cane sugar due to high pre-boil gravity. Looks like the steep actually mashed. Temporarily changed malt ppg to mash ppg, and it is a lot closer to the actual (1.046). OG 1.044 @ 66.6 = 1.045 Fermentation temp set to 67F /-1 2/17/2018 (Day 8 - 1 week) FG reading 1.011 @ 66.6F = 1.012. Yeast cap mostly collapsed. Still a little bit remaining. Not quite at deired target but close. 4.3% ABV (good). Will give a few more days before cold crashing. 2/19/2018 (Day 10) Started cold crash. Took about 48 hours to get down to 50F. 2/23/2018 (Day 14 - 1 week 6 days) FG reading 1.011 @ 63.0F = 1.011. 4.5% ABV. Kegged with two (small) whole cones of East Kent Goldings.

Notes:

Still getting the sweetness. Very slight but noticeable. Most likely due to high steep/mash temps. Hop profile is wonderful. Malt there, slightly on the high side, but not overpowering. A slight haze still, so will need to see if we can improve that (gelatin?). Overall, very happy. Just very subtle adjustments from here.

Notes:

Nice and light on the malt, lighter than when I used Dark Munich malt. Not hoppy up front ... good. Got a slight sweet initial finish,but then gets a nice clean bitterness at the very end.

Notes:

From the fermenter. 1.012FG (4.3% ABV). Temp 66F. Nice golden straw color, and clear. A little fruity on the nose. Nice bitter backbone, and just a little sweetness can be detected. Malt not overpowering.
