Water treated with .25 campden tablets per 5 gallons strike/sparge water. Saturday evening brew session: 1.074 first runnings: 1.035 second, 1.023 3rd 5 gallons collected 4th 1.015. got 5.5 gallons at 1.047. added .5 gallons boiled (and chilled) water to fermenter to raise volume to 6 gallons (estimating SG at 1.043). Added 1/2 jar trub from dual pete light. No action Monday morning, so added more yeast from jar noon Monday. 4.9 abv

Notes:

Sampled while packaging. Obviously green, but has a german flavor. Definitely a light brew with very mild hoppy aroma. Basic "beer" flavor with some balance, but not overwhelming. Heading toward a very drinkable, pleasing brew for many types of beer drinkers. Even at this stage, I can tell this is going to be a solid version of this popular recipe of mine.
