Brewed Saturday 3/20/21 Shooting for a 6.5-7% IPA with big white wine notes. Got GMO yeast from Mike - will use mostly that with some Imperial Juice (London Ale III) to round it out. Shoot for 1065ish and trying to create a bunch of unfermentable sugar with high mash temp and lots of Carapils. Mike says the GMO will add about 5% AA, so that would get me up to 78-80% - need to keep that down to keep ABV down and body/sweetness up. Mash at 158-160*. Adding 14g CaCl, 4g Epsom, 10g Lactic Acid to try to get down to 5.1ish. ~~ Fairly successful brew day. Mashed around 159-160*. Accidentally added about 1/4-1/2 gallon of water to wort. Boiled for about 60-75 mins. OG came in pretty low at 1.058 compared to the target of 1.065. Not quite sure why. Hops: 1/4 oz Bravo @ 3-5 mins 1oz Riwaka, 1oz Idaho 7 @ Whirlpool 195* for 15-20 mins 1oz Riwaka, 1oz Vic Secret @ Whirlpool 170* for 20ish mins Cooled down to 68* or so. Pitched about 1L of a starter of GMO white wine yeast from Mike. Let sit in basement at ambient. Bio-hop of 4oz after about 48 hours: [check on this - something like 2 Nelson, 1 Riwaka, 1 Vic] Held off on DDH because it already smelled awesome, and I liked Sapwood's version w/o dry hopping Kegged Fri night, 4/2/21 FG 1.023 (high!) ABV 4.8% (super low due to low OG and high FG) Really tried to keep the FG up and succeeded to a surprising degree
