This brew went very smooth. First whirlpool addition went in flame out and then second addition in at about 190F. Wort temp into the fermentor was 165F.Yeast Pitch is 92% Safale S-04, 5% Safbrew T-58, 3% Safbrew WB-06. Added full 11g despite the lower gravity and lower volume. I'm debating on whether to sugar of some sort to bump the gravity, though I think I'll leave it be so that it's more of a table beer.1/30 - Added 2oz of dry hop.2/6 - bottled today.
