This brew went very smooth. First whirlpool addition went in flame out and then second addition in at about 190F. Wort temp into the fermentor was 165F. Yeast Pitch is 92% Safale S-04, 5% Safbrew T-58, 3% Safbrew WB-06. Added full 11g despite the lower gravity and lower volume. I'm debating on whether to sugar of some sort to bump the gravity, though I think I'll leave it be so that it's more of a table beer. 1/30 - Added 2oz of dry hop. 2/6 - bottled today. Sample was quite a bit more bitter than I anticipated and tasted just okay.

Notes:

Pours one finger of foam in a slightly brown but more orange color. Aroma is a fruity toast, more of an apple pie and wheat toast. Flavor is a slightly sweet crystal malt with elements of toasted bread, followed by a light orange juice and coffee. Body is more light than medium and a bit of nucleation sharpness. Overall the beer is interesting but not great. This doesn't hit the mark of a pale ale as the hops aren't prominent at all. 3 stars.
