Special Instructions

2G filtered NYC tap water. The rest RO.

Strike water additions: 1.5g gypsum; 3.5g calcium chloride.

Sparge water additions: 3g gypsum: 4g calcium chloride

Mash in 155F. Stir down to 153F.
7.
Target mash pH: 5.55
8.
Preacidify wort with 12ml of lactic acid.

Target OG: 1.069

Pitch London Ale III.

Allowed to ferment without temp control.
13.
1st round dry-hop after 6 days of fermentation.
14.
2nd dry-hop 2 days before packaging.
15.
Carbonate to 2.5 volumes of CO2.

Notes:

Pours a nice white pillowy head that stands and lingers. Is pretty aromatic. Nice soft mouthfeel. A little hot/astringent like sand paper on the tongue. Perhaps over sparging or lack of temperature control is the culprit. All in all, this base beer shows promise for APA and IPA.
