created to determine split mash schedule for a double batch IPA. Then, adjusted when realized SHBS didn't provide 12 lbs two row and needed to adjust recipe after mashed and noticed low gravity on first run. added sugar and DME and created a 5 gallon recipe to save the brew day. Got horrible efficiency, but hopefully can make something interesting out of this fiasco. I think we invented a new style with this mistake. this turned out more like a strong Irish Red since we had double the specialty grains we expected and half the 2 row. So we call this an Imperial Irish Red Ale.

Special Instructions

1.
Mash at 154F for 60 minutes, proceed with boil as normal.
2.
Chill to 66F and pitch yeast.
3.
Ferment between 66F and 68F for 2 weeks.

Notes:

Very dark brew. Has a strong pineapple aroma. The crystal malt flavor takes front-stage yielding a very distinct espresso-like (almost burnt toast) taste. The smooth fruity flavors come after the bitterness diminishes and leans toward peach, pineapple and a hint of grapefruit. This turned out to be a blend of a dark irish amber and an IPA, more toward a strong, hoppy Irish Red Ale. Not bad for a botched batch!
