HOMEBREW PILOT OG: 1.062 - 1.064 [Craig] FG: 1.014 - 1.016 [Craig] 76% Gambrinus Pale [Craig] 12% Baird Crystal 30 [Craig] 6% Baird Crystal 20 [Craig] 6% Munich Bitter with NB Cascade (-25 min) for flavor and probably a bit of bitterness Columbus late (-10 min) for flavor and maybe a tad bit of aroma Centennial at the end of the boil. Yeast: WYeast 1056 [Craig] PRODUCTION ABV: 6.5% [website] IBUs: 65 [website] Yeast: WLP001 [Matt - current Head brewer] 79.31% Pale 10.34% Crystal 30 5.172% Crystal 20 5.172% Munich Water: The Brevard facility matches its water to the Longmont, CO facility. Longmont municipal water data: Cl: 0.86 ppm, Na: 11.5, Ca: 5.8, Mg: 1.1, HCO3: 19.2, SO4: ??? How I calculated the production malt percents: 1- Start using Craig's homebrew proportions (76, 12, 6, 6) 2- Scale to an OG of 1.063. 3- Add 0.357 lbs/gallon of base to simulate the change going to production 4- Set the yeast to WLP001 (AA 70%) 5- Scale to 6.5% ABV 6- Scale to your batch volume ** The scaled numbers for 5.5 gallons eerily turn out to be EXACTLY lined up on 0.25 lbs increments! How I calculated the hops additions: Totally ballparked. AA percents have changed since 1998. Flavor and aroma are not my specialty. Mash rests: With 15.5% crystal, I'm guessing we should favor beta amylase. Mop up with a short alpha amylase rest.
