First posted and adapted from Tony Magee (from LB), have since adjusted sweetness up with more DME, Carapils, more Munich and colour down with less Crystal 60L. Safale US-05 attenuates more than White Labs so this might also increase sweetness.

Special Instructions

1.
Steep crushed grains in 3 L of water at 154 F (68 C) for 45 min
2.
Boil for 60 min, add hops at indicated times
3.
After boil let wort sit for 15 mins before cooling
4.
Add cool water up to 5 gal in fermenter
5.
Ferment at 70 F (21 C) for 2 weeks

Notes:

From the bottle tonight still one of the best I've made. This one hits a sweet spot with fragrance (although not as much as Punk), maltiness (but not sticky sweet) and mouthfeel (but not thick). Cork boomed off the bottle—perhaps lower the corn sugar priming.

next time slightly more residual sugars and malt would be good, maybe a lower attenuating yeast like Cali or 1056

Notes:

First glass was cloudy and "woody"—likely the yeast—but subsequent pints have been excellent. Well balanced with slight malty flavour and slight lingering green peppery aftertaste. 11-12 psi over 2 weeks does the trick. Beer flows fast without giving up C)2 on exit. Head is light colour and laces down the glass. This one goes down fast. Trace of sweetness gives a good mouthfeel with a slightly citrus note.

First bottle one week old—cloudy, hops have green harshness, but flavour and body are good, goes down fast despite high carb, pale head
