I used some specialty Malts, but don't know what categories they are in... doesn't matter anyway... Low efficiency, but hey it's my first mash, wort tastes great. I don't know where all the water disappeared, I put in 45 litres got 36 out? WPL0001 changed from 74 to 85% efficient to match readings, this is due to low mash probably. See brew session for more "changes" during the brew

Notes:

Great earthy hop aromas on the nos, but quite fruity on the tongue. The earthy hop scent and yeast flavours covers for the lack of malt. A very dry mash, leaves you feeling the booze and flowers and not the best balance, yet very drinkable...

Notes:

This was super bitter out of the fermenter, and a little homebrewy tasting (2 weeks). The boil off had reduced the volume, and I thought the bitterness would be too much now. At 4 weeks it has heaps of fruit flavour in the beer and smell, not much off the top aromatic wafting smells (low dry hop). Bitterness mellowed to exactly the right amount. I gave it to 3 friends, and they all loved it, and didn't want me to change the recipe. I was surprised. Enough malt as well. I through the mash was too low, and would leave it dry, with no malty back bone. Personally I want more malt and more off the top aroma, and more Alc%. but am very happy that I hit a winner on my first all-grain. Happy.
