Special Instructions

1.
Heat 6 gal H2O, add 1tbsp gypsum.
2.
Steep grain 170? for 20 mins.
3.
Bring to a boil, cut heat, add extract, return to boil
4.
1oz cluster (60 mins)
5.
At flameout, drop temp to 160?
6.
Steep 5lb pureed frozen peaches for 30 mins
7.
Continue cooling to 70?
8.
Transfer to sanitized fermenter, add yeast
9.
Primary fermentation 7-10 days, until kreusen drops.
10.
After primary fermentation transfer to secondary, add 1.5 TBSP Vanilla extract to fermenter.
11.
Secondary for 1 week.
12.
Keg, drink, destroy Oktoberfest
